A nourishing, no-bake snack made with God’s wholesome ingredients

These bars are a great example of how simple, whole ingredients can come together to make something both delicious and functional for the body.

🍫 Yield: 1 dozen bars
🥣 Ingredients:
- ½ cup raw honey
- ½ cup almond butter
- 2 tablespoons coconut oil
- 1 teaspoon pure vanilla extract
- ¾ cup raw pecan halves
- ¾ cup raw cashews
- ½ cup raw almonds
- 1/4 cup each sunflower seeds and raw pumpkin seeds
- 5 large pitted dates, soaked in warm water for 15 minutes
- ¼ cup shredded, unsweetened coconut
- ¼ cup raisins
- 2 tablespoons dried, unsweetened cranberries
- 1/4 cup goji berries
- 2 tablespoons hemp seeds
- ½ teaspoon cinnamon
- ½ cup dark chocolate pieces (optional)
👩🍳 Method:
- Line a 9-by-13-inch baking dish with parchment paper.
- In a saucepan, combine the honey, almond butter, coconut oil, and vanilla. Bring to a boil, then lower heat and simmer for 10 minutes.
- Meanwhile, place the pecans, cashews, almonds, and soaked dates in a food processor and process until the mixture resembles coarse sand. Add the coconut, hemp seeds, and cinnamon, pulsing a few times to combine.
- Remove the honey mixture from the stove and stir in the nut mixture. Add the raisins, cranberries, and chocolate (if using).
- Spoon the mixture into the baking dish and spread evenly with the back of a spoon.
- Place a piece of parchment paper on top and press the mixture down firmly with your palms so it sticks together.
- Remove the top parchment and freeze for 2 hours.
- Lift the mixture out using the edges of the parchment paper and cut into 12 even bars.
- Store in the refrigerator for up to 1 week.
