🥕 Instructions
- Heat a large Dutch oven over medium heat and add a splash of water or cooking oil.
- Add onion and garlic; sauté 3–4 minutes until tender and fragrant.
- Add sweet potatoes and red bell pepper; sauté another 4–5 minutes.
- Season with paprika and thyme, then pour in the broth and bouillon. Bring to a boil, reduce to low, and simmer 10 minutes until sweet potatoes are tender.
- Stir in coconut milk, tomato paste (or your homemade garden tomato sauce!), coconut aminos, beans, nutritional yeast, and lime juice. Season with salt and pepper to taste.
- Add kale and stir until wilted.
