Ingredients
Pumpkin Loaf
- ½ cup coconut sugar
- ¼ cup maple syrup
- ¼ cup coconut oil, melted
- ½ cup plain, unsweetened almond milk
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 15 oz can pumpkin purée
- 2 cups gluten-free 1:1 flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ tsp ginger
- ½ tsp sea salt
Cinnamon Crumb Topping
- ¼ cup vegan butter
- ½ cup coconut sugar
- ¼ cup gluten-free 1:1 flour
- 1½ tsp cinnamon
- Pinch of sea salt
Instructions
- Preheat oven to 350°F and line a 1 lb loaf pan with parchment paper.
- In a bowl, whisk together the coconut sugar, maple syrup, coconut oil, almond milk, apple cider vinegar, vanilla, and pumpkin.
- Add the dry ingredients and whisk gently — do not overmix.
- Transfer batter into the loaf pan.
- In a separate bowl, combine the crumble ingredients with a fork until crumbly. Sprinkle over the top and lightly press down.
- Bake 50–55 minutes, or until a toothpick comes out mostly clean.
- Let cool at least 15 minutes before slicing into thick, cozy pieces.
