Ingredients
- 1 lb lean ground turkey
- 1 tablespoon extra virgin olive oil
- 1 large sweet potato, peeled and cubed
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 (28 oz) can crushed fire-roasted tomatoes
- 2 (15 oz) cans black beans, drained and rinsed
- 1 cup water
- 1 can tomato sauce or 2 cups V-8
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
- 1 teaspoon black pepper
- 1 small can green chilies (optional)
Instructions
- In a skillet over medium heat, add olive oil, ground turkey, chopped onion, and minced garlic.
- Cook until the turkey is browned and the onions are caramelized (about 5–7 minutes). This step builds rich depth of flavor.
- Transfer the mixture to your slow cooker.
- Add the remaining ingredients and stir to combine.
- Cook on HIGH for 4 hours or LOW for 8 hours.
To Serve
Top each bowl with fresh chopped cilantro and sliced avocado.
