Simple, nourishing, and made with intention
There’s something comforting about starting your morning with a cookie… but what if that cookie actually supported your body?
These Gut-Loving Breakfast Cookies are one of my favorite ways to bring together convenience, nourishment, and balance—all in one simple recipe. As a Functional Medicine Health Coach, I’m always teaching my clients that healing and supporting your body doesn’t have to be complicated. It can be as simple as learning how to use real, whole ingredients in a way that works for your lifestyle.
And that’s exactly what these cookies do.
🌿 Why These Cookies Are Different
These aren’t your typical cookies filled with processed sugars and empty ingredients.
They’re thoughtfully made to support your body from the inside out.
Each ingredient plays a role:
- Oats, flax, and chia seeds support digestion and gut health with fiber
- Healthy fats help keep you full and support hormone balance
- Protein supports muscle, metabolism, and balanced blood sugar
- Natural sweetness gives you energy without the crash
This is what I call “rooted fuel”—meals that are balanced, intentional, and designed to nourish.
🥣 Ingredients
- ¾ cup mashed banana (about 2 large)
- ½ cup peanut butter (or almond butter)
- 2 large eggs
- 2 tablespoons pure maple syrup, honey
- 1 ½ teaspoons pure vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ cup vanilla protein powder
- ¼ cup ground flaxseed, Chia seeds blend
- 1 cup rolled oats
- ½ cup chopped toasted walnuts, pepitas, or almonds
- ⅓ cup dark chocolate chips
- ¼ cup reduced-sugar dried cranberries
👩🏼🍳 Instructions
- In a large bowl, whisk together the mashed banana, peanut butter or almond butter, and eggs until smooth.
- Add the vanilla extract and maple syrup, and mix well.
- Stir in the baking soda, cinnamon, protein powder, flaxseed, and chia seeds.
- Fold in the oats, nuts/seeds, chocolate chips, and dried cranberries. (The batter will be thin.)
- Cover and refrigerate for at least 4 hours, or overnight for best results.
- Preheat oven to 375°F and line a baking sheet with parchment paper.
- Scoop about ¼ cup of batter per cookie and gently shape.
- Bake for 9–12 minutes, until set on the edges and lightly firm on top.
- Let cool on the pan for 15 minutes, then transfer to a wire rack to cool completely.
