Made with pure, wholesome ingredients and free from refined sugars and processed flours, these cookies are the perfect treat for anyone following a Paleo or clean-eating lifestyle.
Ingredients:
- ¼ cup coconut oil or ghee butter, melted
- 1 large egg, at room temperature
- ¼ cup coconut sugar
- 2 tablespoons raw honey
- 2 teaspoons pure vanilla extract
- 1 ½ cups blanched almond flour
- 1 teaspoon baking soda
- ½ teaspoon Celtic sea salt
- ½ cup dark chocolate chips (75–100% cacao)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the wet ingredients: In a food processor, combine coconut oil (or ghee) and egg. Process for 15 seconds until smooth.
- Add sweeteners & flavor: Add coconut sugar, raw honey, and vanilla extract. Process again until fully combined.
- Incorporate dry ingredients: Add almond flour, baking soda, and Celtic sea salt. Process for 30 seconds. Scrape down the sides and process again if needed to fully incorporate.
- Add chocolate: Stir in the chocolate chips by hand.
- Shape the cookies: Using a large tablespoon or cookie scoop, form balls of dough and place them on the prepared baking sheet. Lightly press each ball to form disks about ½ inch thick.
- Bake: Bake for 10 minutes, or until edges are golden brown.
- Cool: Remove from oven and allow cookies to cool on a wire rack before enjoying.
