Wholesome Vitality Carrot Muffins

Ingredients
Dry Ingredients:
- 2 cups almond flour
- 2 scoops Paleovalley Superfood Golden Milk Powder
(or substitute: 4th tsp turmeric + 3 tbsp cinnamon + 2 tbsp ginger + collagen multivitamin powder)
- 2 tsp baking powder
- 4 tbsp monk fruit sweetener
Wet Ingredients:
- 4 large pasture-raised eggs (local farm-raised if possible)
- ½ cup melted unsalted organic grass-fed butter
- 2 tsp vanilla extract
Add-ins:
- 1 cup grated carrots
- ⅔ cup chopped raw pecans
Topping:
- 4 tbsp almond flour
- ½ cup chopped raw pecans
- 4 tsp melted organic grass-fed butter
- 2 tsp coconut sugar
Instructions
- Preheat oven to 350°F. Line 12 muffin tins with paper liners.
- In a large bowl, whisk together almond flour, Paleovalley Superfood Golden Milk powder (or substitute spices), monk fruit sweetener, and baking powder.
- Add eggs, melted butter, and vanilla extract. Stir until just combined.
- Gently fold in the grated carrots and chopped pecans.
- Divide the batter evenly into muffin tins.
- In a small bowl, mix together topping ingredients until crumbly and moist. Sprinkle evenly on top of each muffin.
- Bake for 22–25 minutes, or until golden and a toothpick comes out clean.
- Let cool at room temperature for 15 minutes before removing from tins.
